Carla & Chuck started O Bread in 1977. After finding it more difficult than they thought it would be to decide on a name for their new bakery, they unexpectedly came upon an answer.

 

They realized that the man who had built the house they were renting in Charlotte had written his name in the foundation:

O.B.Read. Nov. 1893.

They said, "look, it says O Bread!"

 

Furthermore, in Japanese,  O before a word signifies reverence and admiration. This is how we feel about bread.
